Claire’s September Salad

Despite the summer coming to an end I'm still loving eating salads, this recipe is packed full of colourful goodness and is an easy and delicious warm salad that will take you from summer into Autumn.

Ingredients: Serves 2-3

-150g of baby leaf salad
-10 vine cherry tomatoes
-150g Tenderstem brocoli
-100g button mushrooms
-1 yellow pepper
-2 chicken breasts
-200g baby potatoes
-1 lime
-1 tablespoon of mango chutney
-2 tablespoons of soy sauce
-Tablespoon of coconut oil
-Salt and pepper
-1 medium avocado


-Heat a frying pan on medium heat with a tablespoon of coconut oil
-Dice the chicken breasts and season with salt and pepper and stir fry until sealed
-Half your baby potatoes and the lime and place in the microwaveable bowel cover with 2 pieces of cling film and microwave for 6-7minutes
-Chop the cherry tomatoes into halves and roughly chop all your vegetables
-Add into the frying pan with the chicken and cook for 4 minutes
-Add the tablespoons of mango chutney and soy sauce
-Serve on the bed of salad and garnish with sliced avocado
